Founded by hospitality and leisure entrepreneurs with a collective 40 years’ experience in restaurants, events, and nightlife. We are currently conceptualising and building brands in the quick serve and casual dining space, with an in-house team that specialises in key strategic areas such as procurement, marketing, social media, operations and finance. We are a team of entrepreneurs who have successfully developed hospitality businesses in the UK, and internationally.

Joshua Simons

Originally from London, Joshua has been in hospitality since he was 14 years old,  working in his father’s Italian restaurant in Richmond, washing the dishes! He went on to open his first nightclub at 21 years old in Bournemouth after moving here with his family. A 10-year stint in nightlife ensued, both in the UK and abroad, before getting back into the restaurant business.

Stephen Crawford

Originally from Nottingham, Steve moved to Bournemouth with his family as a child and was schooled locally before going to University. Steve worked for investment bank JP Morgan for 7 years in Bournemouth and London, before deciding that he wanted to start his own business, joining forces with Joshua to launch Chicken & Blues.

Ashley Brown

Ash has spent the last 20 years in various hospitality roles, including 7 years as Director of Operations for Haché Burger Connoisseurs in London, pioneering the ‘better burger sector. Ash led the M&A and sale of Haché to Sweet Potato Group in 2016, becoming Head of Operations for the group with 20 restaurants, 25M net revenue, and 450 staff.
